  • Not That Simple

    Hello!  Happy Halloween. Ghost  It’s a pretty fall day in St. Louis. 

    Food:  I started my day off with a pumpkin smoothie.


    In a blender I dropped canned pumpkin puree, brown sugar, cinnamon, cloves, nutmeg and milk and a little ice.


    It’s a pretty pleasant way to load up on Vitamin A. Smile  Just a can of pumpkin has 763% of your RDA of Vitamin A and only 83 calories.

    After watching an abysmal Mizzou football game, Mark and I went out to eat.  We didn’t plan it so we saw Sansai Japanese grill and went in.  I ordered the Chicken Curry and a Sumi side salad. 

    The side salad was pretty good – it was a Japanese slaw with cabbage and almonds and a light dressing.


    The Chicken curry was not what I expected at all.


    It looked pretty gross, and it tasted better than it looked.  Unfortunately, it didn’t taste a lot better.  Mark’s dish looked a lot better, and I had food envy.


    Next time maybe I’ll let him do the ordering for me.

    Workout: Yesterday I ran 5.4 miles on the treadmill while watching Jerseylicious.  I know it’s dumb but I have a penchant for watching dumb reality tv.

    Not that Simple:  I’m kind of torn on whether to march forward with the Real Simple week four recipes.  I think I will go ahead and get the groceries for it, but I feel like I’ve had a lot of flops so far and I don’t feel great about spending money on recipes that are hit or miss.  I think I’m just too stubborn to “give up” and also too lazy to create my own grocery list Winking smile

    I upgraded my version of Windows Live Writer and it has all kinds of crazy emoticons.  Bunny 

    I better get some groceries.  I’m Fingers crossed that this last week of the Real Simple cookthrough I’ll have some good stuff to share!

  • Pumpkin Bandit

    Today I went to the store to buy pumpkin – mass quantities of pumpkin.

    When I reached the checkout with 8 cans, the cashier told me that there was a pumpkin shortage last year and that they can only sell 4 cans at a time.

    I thought the shortage was over – but maybe they don’t get people running in and buying quite so much.  Maybe it was the disappointment written all over my face when they said they were going to pry the cans out of my hands, but I managed to leave with the amount I wanted.  (I did not clean them out of pumpkin – not even close.)


    I think I’m going to be set for a while, huh?  One of the reasons I  so much pumpkin was to make pumpkin butter.

    I used Angela’s recipe for pumpkin butter, which is adapted from the Smitten Kitchen.

    Pumpkin butter is not the most attractive thing, but it sure tastes good.

    I had to test it to make sure it turned out, of course!  I had it on bread with peanut butter.


    It turned out really well. 

    Speaking of peanut butter, I accidentally discovered the easiest way ever to mix your natural peanut butter.  Natural peanut butter separates, so that the oil comes to the top.  In order to get the butter spreadable, you need to mix it really well.  The process is kind of messy and annoying – getting the bottom mixed in is a little tricky.  I even got a peanut butter mixer a few years ago to help, and it does work well.  But I discovered an even better and faster way when I realized colder temperatures were making my peanut butter even harder to stir.  I microwaved the glass peanut butter jar for a minute, and took it out and stirred it really well.  I put it in the fridge and I’ve had the most well stirred and incorporated peanut butter ever.  You can thank me later ;)
