  • Lazy Sunday

    It’s now the last day in Nebraska, and I finally have a tired dog on my hands.  I slept in this morning and decided to make it a rest day even though I planned on running.  I just wanted to rest. 

    We had a pretty laid back day today.  It was the perfect fall weather – if I could have this weather for the rest of the year, I’d be ok with that.

    For dinner tonight, my mom made stuffed acorn squash with a side salad and corn (naturally).

    The recipe for the acorn squash is here, which my mom had gotten from my sister in law, Andi.  The recipe for the stuffing calls for bulgur, ground beef, raisins, pine nuts, onion, cinnamon and nutmeg, and some of the squash.  Since my sister in law, Mel, is a vegetarian, my mom substituted soy crumbles for ground beef.  The stuffing tasted slightly sweet to me – I think it came from the taste of cinnamon and nutmeg and raisins and maybe the squash.   I really liked it and I think everyone did.  It would be easy to play with the recipe – use different grains as a base, make it more savory, etc.

    On the side I had Shipyard Pumpkinhead beer.  I would recommend it – the pumpkin came through.

    After dinner, we had lemon creme pie.

    It will be sad to leave.  We’re not looking forward to another day on the road!  If we could get that teleporting technology available, that would be great.

    Whenever I bring my dog up to Nebraska, or really anywhere new, she has trouble adjusting and sleeping through the night.  Last night was no exception, even though we took her to the dog park and she had been awake the entire day on the drive up.  I was not happy with her when she didn’t want to sleep in today! 

    On a happier note, I did go for a 5 mile run.  My dad biked next to me.  The weather was perfect running weather.  Cool – not hot, not cold.  It was around the 50s.  I think I can thank the weather for a really great run – negative splits for each mile:

    While Daphne slept, her brother Elliot made sure we paid attention to him.

    My mom managed to hold onto him for a few pictures.  For dinner, we drove back to Lincoln and my mom, dad, Mark and I went to Lazlo’s, a grill and brewery.  Since the weather was so nice, we were able to sit outside and get seated right away.  Maybe the thing to do at a brewery is get a beer (okay, it is the thing to do), but I saw the strawberry mojito on the menu and it was calling my name.  I heeded the call.  Twice.

    We got spinach artichoke dip for an appetizer and beer bread.

    My entree was a crab cake wrap (sounds weird but it was good)!

    I ate half the wrap, most of the fries, and now I am stuffed!

    There will be more hanging out with family tomorrow, and hopefully some pictures of Daphne’s mom and dad who I nearly neglected today (oops!!)… and a little run on the trail too.

  • The Good Life

    After driving from 8:30 this morning until 3:30 this afternoon, I’m finally in Nebraska.  Nebraska’s state slogan is “The Good Life,” no joke.  Two stops, one sub sandwich, and a couple miniature naps – all in all, not a bad drive.  It’s drizzly and gloomy out, but not a bad day for the dog park!

    The dog park in Lincoln, Nebraska is huge!  There are always a few dogs there every time we go and Ada has a fantastic time.

    After we got back to my parents’ house, my dad was cooking dinner!  He was making Indian chicken curry and corn on the cob.  Corn on the cob is required in the Husker state.

    It was really, really good.  My dad has come a long way from messing up Kraft macaroni and cheese (yes, he did once oh, about twenty years ago).

    Tomorrow I get to see my niece Daphne and nephew Elliot.  Stay tuned if you like cute babies.
